We Present Another One Of Stalin’s Favourite Dishes: The Famous Russian Mince Cakes.

Today we present another dish that was a favourite of Joseph Stalin, the famous Russian mince cakes, kotlety. Simple in preparation, it is probably one of the most popular dishes in Russia still. In the Russian cookery books translated into English the mince cakes are often mistakenly referred to as ‘beef cutlets’ or just ‘cutlets’, a name that sounds very confusing for a Western ear. It is actually a sort of a hamburger, if you like, only thicker.Ingredients: half a kilo of beef mince, 250 grams of pork mince, 250 grams of lamb mince. Three slices of white bread. One medium sized potato. One medium to large sized onion. 200 grams of milk. 10 grams of sugar. Salt and pepper.

Soak the bread in milk. Cut the potato and onion into pieces. Put the soaked bread, chopped onion and potato into the food processor. Blend until you have a smooth paste. It can be quiet runny. Put the beef, pork and lamb mince into the mixing bowl and add the mixture of bread and onion and potato. Add salt and pepper to taste. Add the sugar. Mix all the ingredients well.

Wet your hands and shape the mince into cakes. Do not make them too big. Stick to the size of a medium sized hamburger but do not squash them.

Heat the frying pan well. Add a little bit of olive oil and place the minced cakes, one by one, into the frying pan. Lower the heat to medium and fry them on one side for about three to four minutes. Make sure you do not burn them. Turn them over and fry for another three to four minutes. Lower the heat and continue frying them until they are done. You can check if they are ready by sticking a knife into them and if the juice runs clear then the mince cakes are ready. If not, continue frying on low heat. It usually takes twelve to fifteen minutes.

Serve with mash potatoes or pasta. A great main course! Finger licking good, as Stalin might have said if he were alive. But luckily for everyone, he is not. Smothered in his sleep by his faithful sidekick, the chief of secret police, Lavrenty Beria, who wanted so much to become the next Soviet leader.

Didn’t work out for him, though. Was arrested and shot for treason.
